レシピ:ナッツ入りザクザク生チョコケーキ Recipe : “ZakuZaku” Raw Chocolate Cake including Some Nuts

前回のブログで書いたインターネット上の友人に送ったケーキ。こんな感じ。

『ルマンド』を使ったボトムがいい感じにザクザクです。

SERVING
1 round cake pan (φ18cm)

INGREDIENTS
<Bottom>
・24 sticks (2 packs) 『Lumonde』 made by BOURBON 
 →If you cannot obtain it, you can use cone flake instead of it.
・150g Couverture chocolate
<Raw chocolate including some nuts>
・150g Nuts (Walnut, Almond, Cashew nuts, etc.)
・130g Couverture chocolate
・200cc Fresh cream
<Topping>
・About 30g Caramel crunch or Almond praline

DIRECTIONS
<Advance preparation>
(1) Set a pattern paper on only bottom of hole pan.

<Preparation>
【Bottom】
(2) Put a bowl of couverture chocolate in hot water, and melt it.



(3) Crush 『Lumand』 finely.  Add it to melting chocolate, and stir well.

(4) Put them to hole pan, and make side wall (height is about 3cm) and flat bottom with them. (If you use a pallet knife, this work become easily.)


【Fillings】
(5) Pre-heat the oven at 160℃. Spread some nuts on the cooking seat, and roast them at 160℃×10min.




(6) Put a bowl of couverture chocolate in hot water, and melt it.




(7) Whisk fresh cream until the stiff peak stage in another bowl.



(8) Add melting chocolate in whisked fresh cream, and stir well.



(9) Add roasted nuts in mixture cream, and stir well.




【Finishing works】
(10) Pour in filling to bottom, and flat the surface.




(11) Spread Caramel crunch or Almond praline on the surface, and chill 2hour over in refrigerator.

『ルマンド』って実はRではなくてLなんですよね。

あと、生チョコだからといってrareではなくrawです。
